If you don't give Undyne the water, then she will fall into the lava. Or she will die from dehydration.

By doing this, you cannot make the appointment with Undyne, and therefore cannot draw the pacifist ending.

Because Asgore dies. (Suggesting your did a neutral route) If you kill him, then Undyne goes into a state of distress, therefore, making her hate you.
